Kokosbollskaffe - Coconut Coffee

Kaffe är mitt livselixir och jag vill inta det varje dag. Jag ser till att det är ekologiskt eftersom jag inte vill att människor ska fara illa, eller miljön de befinner sig i. Har jag inte råd med kaffe som är rättvisemärkt, ekologiskt så får jag helt enkelt vara utan kaffe, jag skulle inte kunna dricka mitt kaffe med gott samvete när jag vet hur illa det kan se ut på plantagen.

Under kaffeskörden migrerar många människor till kaffedelstaten Minas Gerais i sydöstra Brasilien i hopp om att finna arbete. Arbetarna är oftast arbetslösa och säsongsarbetare, och väljer den industri som erbjuder mest arbete och högst lön. Det är vanligt att kaffearbetarna lämnas utan skor, skyddsutrustning eller tillgång till vatten. Kaffearbetarna är fattiga, och behöver sätta mat på bordet, och därför ställer de inte så många frågor. I Brasilien är det vanligt att arbetarna fångas upp i skuldslaveri, då plantageägarna påstår att de är skyldiga stora summor för kost och logi som arbetarna sedan tvingas arbeta av.  Risken för cancer bekräftas av flera experter, och det finns studier som visar att bönder som arbetar med kaffe löper tre gånger så stor risk att drabbas av cancer jämfört med resten av befolkningen. De löper också större risk att drabbas av depression, vilket resulterar i att risken för självmord är tre gånger så hög i kaffeindustrin. Problemet går bortom skyddsutrustning och lantarbetares hälsa, eftersom gifterna förorenar gårdarnas vattenkällor och sprider sig över de närliggande områdena.
En favorit som är återkommande i det här hushållet är "Kokosbollskaffe", att den fick det namnet beror på att smaken är just det. =)


2 Portioner:

6 dl ekologisk kaffe
2 ägg
4 matskedar ekologisk kallpressad kokosolja (med smak)

Gör så här:

Knäck i äggen och lägg i kokosoljan i en rostfri skål. Mixa med en mixerstav, eller visp. Brygg kaffet, häll det i skålen och mixa en gång till.

Drick direkt och ha ett bra samvete över att du alldeles nyss druckit något som både är fantastiskt gott, och nyttigt =)

Kokosolja = Naturliga fettsyror, Laurinsyra
Ägg= D-vitamin, E-vitamin, Folat, Selen

D-vitamin är ett av få näringsämnen som vi svenskar har svårt att få tillräckligt av. D-vitamin finns mest i fet fisk men också i ägg.
E-vitamin är en effektiv fettlöslig antioxidant och skyddar vitamin A och D och gör att de fleromättade fettsyrorna inte bryts ned i vävnaderna. De anses bidra till cellmembranens men också de röda blodkropparnas stabilitet. Vitamin E är viktigt för ett normalt immunförsvar.
Selen (Se) är en antioxidant och ingår i många enzymer som skyddar cellerna mot fria radikaler och oxidation. Selen samverkar med vitamin E och deltar i immunförsvaret.
Folat är ett vattenlösligt B-vitamin som är nödvändigt för cellernas ämnesomsättning och nybildningen av röda blodkroppar

Coffee is my elixir of life and I want it every day. I want it to be organic because I do not want people to come to harm or the environment they are in. If I can´t afford the coffee that is fair trade, organic, then I will simply have to be without coffee. I could not drink my coffee with good conscience, when I know how bad it can be at the plantation. 

During the coffee harvest many people migrate to coffee Minas Gerais state in the south east of Brazil in the hope of finding work. The workers are mostly unemployed and seasonal workers, and select the industry that provides the most work and maximum salary. It is common for coffee workers to be left without shoes, protective equipment or access to water. Coffee workers are poor, and they need to put food on the table, and that is why they don´t ask so many questions. In Brazil, it is common for workers to be trapped in debt bondage, where plantation owners claim that they owe large sums of money for food and accommodation by the workers, then they are forced to work it off. The risk of cancer is confirmed by several experts, and there are studies showing that farmers working with coffee are three times as likely to develop cancer compared with the rest of the population. They are also more likely to suffer from depression, resulting in the risk of suicide that is three times as high in the coffee industry. The problem goes beyond protective equipment and farm workers health because toxins pollute farms, water sources and spread over the surrounding areas.

A regular favorite in this household is "Coconut Coffee". The drink got that name because the taste is a mix between coffee and coconut. =)



2 Servings
 
6 decilitre organic coffee 
2 eggs 
4 tablespoons organic cold pressed coconut oil (with flavor)

To do this:

Crack the eggs and add the coconut oil in a stainless steel bowl. Mix with a hand blender or whisk. Brew the coffee, pour it in the bowl, and mix it once again.

Drink immediately and have a good conscience about the drink you are just now drinking. Something that taste wonderfull and is useful =)

Coconut oil = natural fatty acids, Lauric Acid 

Eggs = vitamin D, vitamin E, folate, selenium
    Vitamin D is one of the few nutrients that we Swedes (the rest of the world need it to) have been difficult to get enough of. Vitamin D is found mainly in oily fish but also in eggs.

    Vitamin E is a fat soluble antioxidant effective and protect the vitamin A and D, and allows the polyunsaturated fatty acids to not brake down in the tissues. They are considered to contribute to the cell membrane but also the red blood cell stability. Vitamin E is important for a healthy immune system.

    Selenium (Se) is an antioxidant and is part of many enzymes that protect cells against free radicals and oxidation. Selenium interact with vitamin E and participate in the immune system.

    Folate is a water-soluble B vitamin that is essential for cell metabolism and formation of red blood cells
